3. The Beauty of Aubrac: a Source of Inspiration

Michel Bras feels a deep love for the village of Aubrac where he grew up and has always worked. "Speaking of my feeling of love for Aubrac is like speaking about everything, it is like speaking about the world. It is speaking about me, about mankind, about art and, of course, about cooking." For him, every creation, every idea is seen through the prism of the Aubrac countryside.

He describes Aubrac as "a place that exudes silence and is filled with sunlight, where from spring to summer soft grasses of every shade of green stretch as far as the eye can see, fragrant flowers blow in the wind, and the air is heavy with the scent of herbs."

All the natural splendor of Aubrac are to be found in the Gargouillou, the signature dish of Michel Bras. Composed of a variety of vegetables, herbs and seasonal flowers, it was conceived by Michel while he was shopping in Aubrac.

"The creation of the Gargouillou is the culmination of my art. It is the core of the music I bring to the table, rising from the bottom of my heart to the tip of my tongue. It's a dish that suits my temperament. Of course, my customers are free to interpret it however they please."
